donut? fruit flan? apple crisp? or make cupcakes or something for everyone else and give her a muffin cup with chips or pretzels or cheezies like someone else mentioned....
Maybe a trip to Baskin Robins where she can try little samples of different types of ice creams? If you find one she likes, then maybe an ice cream cake. Mine was the same, but would eat some ice creams or puddings.
The pudding reminded me of worms in dirt...you could make individual ones in those clear plastic cups if she likes pudding?
I used to love those when I was a kid, planning on making them for my older daughter's 5th birthday this year. But unfortunately no, I know my little one will not eat pudding either. My older one used to be really fussy with eating and grew out of it, and her little sister is exactly the same!
It sounds so bad listing all the things she will refuse, but not much I can do about it! She does actually eat, I promise! LOL
I wouldn't worry about it too much, make a fruit salad and be done with it! My husband never liked sweets as a child and his parents made him a cake out of homemade pate. Sounds disgusting to me but he loved it.
