Start now and start packing up anything that you won't be needing in the next 3 weeks. (movies, books, knick knacks, kitchen stuff that isn't used regularly, summer clothing/shoes, etc, kids rooms)
Pack up most of the daycare toys/books/art supplies. They will manage on a smaller amount of toys for a couple of weeks (you said you are going on vacation so dc will be closed for that?)
Pack up the closets, the things on the walls and the garage. Pack up anything and everything that you can. Donate what you aren't taking with you.
