Either explain this and make it very clear to them that yes they do need a full time spot or offer them the alternative of a daily rate which is equivalent to dividing your weekly rate by 3 and make it clear that if they only want to attend on certain days each week which will leave you with 2 days a week that are impossible to fill then they can do it with pleasure but at a premium. I'm sure they aren't stupid and know what they are asking you to sacrifice at your financial expense. It implies that they think they are in charge and calling the shots when they are in fact not your boss and you are the one to decide what is okay and what isn't.
