I'm sure most providers have experienced that.

What I do is say something along the lines of "I am conducting interviews all week and will be making a decision by whatever date. Let me know before that date if you would like to be considered for the spot." I do this whether or not I am actually interviewing anyone else!

I usually know right away if I am interested in them or not but never let them know. I consider a spot available until I have a signed contract and money in my hand.
