Employment contact for daycare irrelevant. We not employee. We self-employed. Need contract of service not employment contract.

Yes you create your own contract. You can find lots of examples online without having to see a lawyer.

It detail everything about the service being contracted.
Who the contact between, (you and them),
what the full parameter of service is (the child care is for, hours of care agreed/open and days you not open, what included in fee, what not included in fee, how much fee is, when fee is due, what happen if not paid on time, what happen if parent pick up late, what if child sick, what if child out on vacation, what if you on vacation or sick.
How to end contact - notice period, paid if not attending or not, reasons you can instantly terminate care
And it need be signed by you and them. Then you need keep original to prove agreement if issues and they entitled to copy for them refer to.
